The Famous Pitmaster Mike looks forward to his Inchydoney Master Class and Reveals His Recipe for BBQ Baked Beans

  Mikes BBQ Baked Beans From Scratch 

You will need:

  • 4 oz. streaky bacon
  • 1 onion,  minced (I use a box grater)
  • 4 cloves garlic, minced
  • 1/2 kilo dried white beans (cannelini work well)
  • 2 liters water
  • 250 milliliter oz. hot black coffee (instant is fine)
  • 1/2 cup Mike's BBQ Sauce, plus extra for seasoning
  • 115 grams dark brown sugar
  • 4 1/2 teaspoons prepared mustard 
  • Tabasco or similar (optional)


1) Adjust the oven rack to lower-middle position and heat oven to 150 degrees. Cook the bacon until beginning to crisp,about 5 minutes. Stir in the onion and cook until the onion is softened, about five minutes.

2) Stir in the garlic and cook until fragrant, about 15 seconds. Stir in beans, water, coffee, barbecue sauce, brown sugar, and mustard. tabasco and 1 teaspoon salt.Bring to a boil, scraping up any browned bits. Cover and transfer to the oven. Bake, stirring every hour, until beans are tender, about four hours.

3)Remove the lid and continue to bake, uncovered, until the liquid has thickened to a syrup-like consistency, 1 to 1 1/2 hours. Season the beans with additional Mike's BBQ Sauce, Tabasco, and salt and pepper to taste. 

4) To make ahead: After cooking the beans can be cooled to room temperature and refrigerated, wrapped tightly in plastic wrap. for up to four days. Reaheat over medium-low heat before serving.
